Saving in NEO has joined the Meatless Monday movement!

From the Meatless Monday website: “Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel.”

This week’s Meatless Monday meal was Stovetop Casserole.

Here is what you need:

1 box Stovetop (I used the Cornbread flavor)

1 can Great Northern Beans (substitute cubed chicken if you want a meat version)

1 bag of Steamfresh rice and veggies mix

1 can cream of mushroom soup

1/2 can water

Prepare:

Mix all ingredients in a casserole dish.  Bake for 45 minutes at 350.

I love this meal because it is tasty and filling.  We always have the ingredients in the pantry making it a staple in our recipe box.

Meatless Monday – Potato Boats

This week’s Meatless Monday meal was Potato Boats. This meal is very simple, quick and cheap.  It is so yummy, its sure to please anyone.

Here is what you do:

Bake potatoes until soft.  Let cool for a few minutes.  Scope the insides out and put into a bowl. Add a can of cream of mushroom soup,  rice and veggies of your choice to the bowl.  Mix well, put back into potatoes.  Top with cheese.  Put back into warm oven to melt cheese.

This week’s Meatless Monday meal was Baked Spaghetti. This meal is very simple, quick and cheap.  It is so yummy, its sure to please anyone.

Here is what you do:

Combine 1 lb cooked and drained pasta, 3 beaten eggs, 1/2 Cup parmesan cheese, 16 oz of mozzarella cheese.  Cook in a casserole dish for about a half hour on 350. Serve with spaghetti sauce.  A new twist to an old favorite!

Tofu U from Nasoya

I have to admit I’m afraid to cook tofu.  I’ve never been very fond of it….but I really don’t know how to use it correctly either.  I have a son who is a vegetarian and I would like to learn how to use tofu to cook him some more interesting meals.  When I saw Tofu U from Nasoya, I thought this is the perfect challenge for me.  When you sign up, you are given coupons for $1 off any Nasoya Tofu.  Each week they will email you additional coupons. The challenge is to create 4 meals at home and they will give you  an official Nasoya Tofu U t-shirt or Nasoya gym shorts. The Tofu U website is full of how to videos and recipes.  I think this will be a fun project for me and the kids.

I already signed up and got my coupons.  Now…what should I cook first?  I’ll post updates weekly.  Please share your favorite recipes or let me know if you are joining too!
