I am continuing my education with Tofu U from Nasoya.

I tried something completely out of my comfort zone….sloppy joes!

Talk about shocking, these were great.


  Ingredients:

1 lb tofu, mashed

1 red pepper chopped

1/4 C onion chopped

1 C mushroom chopped

1 can black beans

1 can Manwich

Instructions:

Saute veggies in medium pan.  When soft add tofu, beans and manwich. Let simmer for about 15 minutes. Serve on a hamburger bun with chips.
