Saving in NEO is joining the Meatless Monday movement!

From the Meatless Monday website: “Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel.”

This week’s Meatless Monday meal was Baked Spaghetti. This meal is very simple, quick and cheap.  It is so yummy, its sure to please anyone.

Here is what you do:

Combine 1 lb cooked and drained pasta, 3 beaten eggs, 1/2 Cup parmesan cheese, 16 oz of mozzarella cheese.  Cook in a casserole dish for about a half hour on 350. Serve with spaghetti sauce.  A new twist to an old favorite!
