I saw a recipe for Baked Pumpkin Oatmeal and thought what a great idea, I have to try that.  And so I did. Though as usual I didn’t follow the recipe and made it in a crock pot instead of the oven.

Here is what I did: I put in half a can of quick oats, a can of pumpkin, about 1.5 cups of milk, cinnamon, vanilla and brown sugar.  I mixed it all up and let it sit in the crock pot on high for a few hours.  The aroma from this was amazing!  The taste was even better.  The entire family
enjoyed it.  Definitely something I will be making more often.
